Raisin’s date back to ancient civilizations where they were used as a primary sweetener for many meals.  In this recipe they are just a wonderful flavourful addition to an already sweet cake.

A Raisin and Spice Bar is like a cross between a cookie and a cake.  Its a light spicy flavoured cake (cinnamon, nutmeg, cloves, allspice, ginger) with raisins cut into bar shapes.  It’s a Southern dessert, and a delcious, not-to-fattening snack.  They are very similar to a snack called a ‘hermit’  but a little less chewy and more cakey.  Also, hermits have their own holiday later in the year so I couldn’t just eat those in lieu of making this delicious dessert. 🙂
